300 år i hjärtat av Chablis

Domaine Pinson är lite av en doldis i Chablis men deras viner är däremot kända bland konnässörer. Trots den lilla och exklusiva produktionen har Pinson vunnit både pris och framgång på de lokala tävlingarna i Chablis såväl som stora internationella utmärkelser. Deras 2018 Chablis Grand Cru Les Clos utsågs av Decanter till en av årgångens allra bästa viner med höga 97 poäng.

Historia

Egendomen Pinson har hållit till i området mellan Vaillons och Montmains i Chablis sedan 1640. Chablis är, som bekant, en region som är känd för sin förhistoriska och fossilrika jordmån och vinerna man producerar har inga andra likar i vinvärlden. Det är emellertid få andra producenter i området lyckas visa upp en så distinkt saltig mineralitet som Pinson. 300 år efter att familjen började odla i Chablis – år 1940 – tog Louis Pinson över rodret. Louis kom att bli den som verkligen satte Pinson på kartan, bland annat genom att vara en av de första att sälja vin till konsument eftersom de själva började buteljera sina flaskor. Idag drivs egendomen av Charlène Pinson och hennes pappa Laurent.

Vingårdar

Pinson gör viner från flera lägen i Chablis. De äger 14 hektar i hjärtat av Chablis; från enklare AOC viner till de mer komplexa Premier Cru-lägena som bland annat Mont-de-Milieu, La Fôret och Montmains till det världsberömda Grand Cru-läget Les Clos. Far och dotter ser sig inte bara som vinodlare utan som beskyddare av den historiska jorden i Chablis. Man är inte ekologiskt certifierad – men arbetar i stort sett efter ekologiska principer efter filosofin Lutte raisonnée. Man arbetar utan insektsmedel och ogräsmedel och plogar jorden för att tvinga rankorna att växa sig allt djupare. Alla druvor skördas för hand.

Vinifikation

I vineriet är filosofik ”informerad flexibilitet” – det vill säga att varje vingårdslott kräver olika behandling. Vissa viner jäses i tank och andra i ekfat och detsamma gäller lagringen – här förekommer såväl gamla som nya ekfat och ståltankar. Varje år får deras erfarenhet styra vinmakningsbesluten för varje vingård. Denna intuitiva process leder till imponerande intensitet och renhet i frukten genom alla egendomens viner.

1. What is your favorite time of the year in the vineyards?
”The summer, because this is the period where we see the vines growing.”

2. What is your favorite part of being a winemaker?
”To share our passion of wine with friends.”

3. What is your least favorite part of being a winemaker?
”The stress at the beginning of spring with the risk of frost in the vineyards.”

4. If you had to describe the style of your winemaking with just one sentence – what would it be?
”Each parcel produce a different wine in accordance with its terroir and exposure, so we work to show that each wine can give a special emotion through our passion to do it.”

5. Which of your own wines would you bring to a deserted island, and why?
”First of all I will try to fish a lobster or some scallops, and then opening a Chablis Grand Cru Les Clos to drink with.”
