Piemontes moderna historia är tätt sammanlänkad med Paolo Scavino – en av regionens allra mest aktade namn som sedan starten varit med och drivit kvalitetsarbetet framåt med hjälp av passion och innovation. Över 100 år efter grundandet fortsätter den fjärde generationen, Enrica och Elisa Sacvino, att värna om familjenamnet genom att befästa deras roll som en av de allra största även i framtiden.

Historia

Paolo Scavinos historia startade när patriarken och adelsmannen Lorenzo Scavino och hans son Paolo skapade familjeföretaget år 1921 i kommunen Castiglione Falletto. På 50-talet delades familjens då 11 hektar upp mellan de båda bröderna Paolo och Alfonso. Alfonso kom sedermera att börja göra vin under namnet Azelia – en av Tryffelsvinets mest älskade producenter som du kan läsa mer om här – medan Paolo fortsatte genom att skapa viner under eget namn från de 5,5 hektar han erhöll efter uppdelningen. De båda ägorna ligger grannar och de nära släktingarna Luigi Scavino (dagens ägare till Azelia) och Enrica och Elisa Scavino (dagens ägare till Paolo Scavino) är mycket nära varandra (Luigi och Enrica och Elisas pappa var kusiner).

Den man som verkligen satt Paolo Scavino på kartan var Paolos son, Enrico Scavino. Enrico var bara 10 år gammal då han år 1951 började jobba sida vid sida med sin far i vineriet. Med tiden kom han att bli en av de välkända Barolo Boys som satte regionen på kartan under 80- och 90-talet. Vid sin död, i februari 2024, hade han över 71 års erfarenhet och drevs fram till slutet av en brinnande passion att hela tiden skapa bättre och bättre viner genom att aldrig sluta att experimentera. Döttrarna Elisa och Enrica, som i många år arbetat sida vid sida med sin far som vinmakare och exportansvarig, för idag vidare faderns fana, särskilt eftersom Elisa ärvt hans experimentlusta i vineriet. Vi lär kunna förvänta oss stordåd och innovation även i framtiden!

Vingårdar

Paolo Scavino äger totalt 30 hektar i Barolo och har mark i 20 världskända Barolo Crus. Vineriet ligger i hjärtat av Barolo, Castiglione Falletto, en unik liten by i Barolo eftersom det är här som Barolos två jordmåner (från den Tartonianska och Helvetianska epoken) möts och lånar ut sina egenskaper av både kraft och elegans till områdets viner. Förutom Castiglione Falletto äger Paolo Scavino också vingårdar i Barolo, La Morra, Novello, Serralunga d’Alba, Verduno, Roddi och Monforte d’Alba. Enrico var en av de första att vinifiera sina cruer separat då man 1978 för första gången buteljerade sin Barolo Bric del Fiasc (en vingård som delades upp i två lika stora delar mellan Paolo och Lorenzo Scavino). Sedan 1985 gör man en Cannubi, år 1990 anskaffades mark i crun Rocche Annunziata i La Morra och 2002 köpte familjen mark i Bricco Ambrogio i kommunen Roggi med hjälp av Domenico Clerico. Senaste tillskollet kom 2007 då familjen blev ägare till en liten del av Monvigliero i Verduno.

På Paolo Scavino är arbetet och filosofin inspirerat av kärleken och respekten till jorden och målet är att lyfta fram renhet, expression, komplexitet och elegans i vinerna man skapar av de lokala druvsorterna nebbiolo, dolcetto och barbera genom att belysa det unika i varje cru. Genom att lägga sitt största fokus ute i vingårdarna och därmed minimal handpåläggning i vineriet låter man varje vingård och druvsort sjunga sin egen unika melodi.

Vinifikation

Vinmakningen på gården har utvecklades stort under Enricos 70 år där den stora konstanten sedan Paolos tid är ett rigoröst hygientänk där renhet i vineriet och friska druvor är av största fokus. Eftersom Enrico var med under så lång tid kom han ihåg en tid där man farmade marken med hjälp av hästar och oxar. När Enrico fick sin första traktor av sin far lär han ha sagt ”jag kunde inte ha blivit gladare om jag så fått en Ferarri”. 1993 anlände rotofermentatorer till vineriet och mellan 1996-1999 byttes de slavonska ekfaten ut mot fransk ek. Dessa barriquer används under vinets första 10 lagringsmånader för att stabilisera färgen innan vinerna fördes över till stora bottis. Sedan denna tid har andelen ny ek minskat över tid. Från 30% ny ek under 90-talet ner till cirka 15% år 2015.

Gårdens viner vinfieras parcell för parcell för att dra nytta av små jäsningskar och en ökad kontroll över processen. 2007 skapade och designade Enrico till och med ett helt eget jäsningskärl som enbart använd till Barolovinerna för att ytterligare framhäva nebbiolodruvans finess. Alla Barolo-viner som inte är klassade som Riserva görs enligt samma princip, för att framhäva uttrycket i varje enskild terroir. Jäsningen äger rum i rostfria ståltankar med temperaturkontroll. Jäsningen startar med inhemska jäststammar med en maceration som pågår 8-12 dagar följt av 20-30 dagars alkoholjsäning. Under första årets lagring väljs de bästa tankarna ut – de som inte lever upp till Elisas höga standard säljs vidare. Vinerna lagras därefter i 10 månader på neutral fransk ek följt av 12 månader i stora bottis, 10 månader i ståltank och slutligen 10 månader på flaska innan de släpps på marknaden. Fokus är alltid att skapa viner av högsta kvalitet – Elsa och Enrica skulle kunna producera fler flaskor men väljer att hålla nere skördeuttaget för att hålla kvaliteten på högsta nivå.
